I like the idea of adding the Mac Noodles. Never thought of that. I have always just dehydrated the canned chili by itself and then added it to rice that I cook on the trail. I will need to try your method. Thanks.

@ez2curanut Forgive me, I am not qualified to give you a safe answer on freeze dried. I can tell you from my experience in dehydrating and vacuum sealing food – I don’t go beyond 6 months. The food I dehydrate goes directly into the freezer after vacuum sealing. I then use them within 6 months after I make them.
I have a Mt. House Chili Mac freeze dried meal on the shelf and I checked it to respond to you – the expiration is Feb 2015, but the salt as you mention is way up there. Thanks!

Forgive my ignorance,The freeze dried offered by some companies out there have high content of sodium >720mg/serving. i guess because of the shelf life? Am thinking of replacement of purchased w/home-made. I don’t add salt when cooking; after seeing this, I may now possibly freeze dry my food. How long will this preserve once u have vacuum sealed? 1 month, 6 months? Without going into details, I have “unmanned” shelters, @8k~13k ft above sea level that can end up being one’s home for a few days.
